DAY 37 of my salad is a spicy avocado & tomato salad π π₯<br /><br />recipe (makes 2 servings)<br />1. chop 2 bell peppers into 1/2” thick pieces (I used 1 yellow and 1 orange) and 3 heirloom tomatoes<br />2. add bell peppers and tomatoes to a large mixing bowl along with 1/4 cup salsa verde and toss to coat<br />3. next add 2 small or 1 large avocado cut into cubes<br />4. add 1 pinch of red pepper flakes, salt and pepper<br />5. add juice of 1 lime and 1/4 cup jalapenos<br />6. plate with tortilla chips to dip, and enjoy!<br /><br />#saladsthatarentsalads #nutritionbymeagan #saladrecipeidea #tomatoavocadosalad #registereddieitian
